Here are my new favorite dessert recipes that I talked about last week. They are from the Weight Watchers website!
When my family enjoyed the raspberry ice cream sandwiches (my favorite!), my girls thought it would taste good with peanut butter. Well, there is a peanut butter version of the recipe on WW too! I have included the peanut butter alternative as well!

Mini Raspberry Cheesecake Ice Cream Sandwiches
Makes 12 ice cream sandwich
4 oz low fat cream cheese
1/2 cup raspberries (fresh or unsweetened frozen)
2 Tbsp raspberry jelly (I used seedless jam)
1 1/2 cups lite whipped topping (I used lite cool whip)
24 chocolate wafers (I found them at Jewel)
In medium bowl, using an electric mixer, beat together cream cheese, jam and berries until smooth. Add whipped topping; beat until just combined. Spoon 2 Tbsp. raspberry mixture on top of a wafer cookie. Place a second wafer on top. Set on a baking sheet and repeat with remaining ingredients. Freeze until firm.
Mini Peanut Butter Ice Cream Sandwiches
Makes 12, ice cream sandwich
2 oz low fat cream cheese
1/4 cup powdered sugar
1/4 cup smooth peanut butter
1 1/2 cups lite whipped topping (I used lite cool whip)
24 chocolate wafers (I found them at Jewel)
In medium bowl, using an electric mixer, beat together cream cheese, sugar and peanut butter until smooth. Add whipped topping; beat until just combined. Spoon 1 1/2 Tbsp. raspberry mixture on top of a wafer cookie. Place a second wafer on top. Set on a baking sheet and repeat with remaining ingredients. Freeze until firm.
