Following recipes isn’t my strong suit, so I make things up that sound good. Here’s my attempt at recreating it…modify to your taste & cooking expertise!!!
1️⃣Cook whole wheat pasta as directed….don’t forget to add some salt to the water after it’s boiling.
2️⃣ While pasta is boiling, use kitchen shears, snip ends off ends of mini red & yellow peppers. Mix with grape tomatoes & a few heaping tablespoons of pre-chopped garlic.
3️⃣Cover baking sheet with foil for easy clean up, spritz foil with olive oil, dump veggies out evenly, generously spritz with olive oil & roast at 400* for roughly 12 minutes.
4️⃣ You do you…..but I buy pre cooked, deveined, frozen colossal shrimp (Walmart delivery), thaw it in frig, season it up with Old Bay seasoning & heat in a small glass Pyrex in air fryer til warm. I’d like it just as much sans shrimp but for me at least, adding protein to my day makes a huge difference in my satiety level….not to mention the million health benefits to eating lean protein!!!
5️⃣When pasta is done, fold in roasted veggies, 10 ounces of pre washed baby spinach (no need to do anything to it ahead of time….it wilts perfectly from the hot pasta & veggies)
6️⃣Add shrimp. Toss. Top with fresh Parmesan cheese. 🪄Voila…..DELISH! Not to mention super vibrant & pretty!
