Watermelon Granita

Hello Reader! Today’s Tasty Tuesday idea comes from a WW member who is just getting ready to celebrate losing 5% of her body weight! Yay! Achieving the 5% weight loss goal is when most of us can really start to feel the weight loss adding up and wow, does that control feel terrific. I was a bit out of my regular routine last week, so I have not had a chance to try this one myself but I plan to this weekend. It sounds like the perfect snack to enjoy while sitting outside on one of these warm summer evenings.
A big thanks to Claudia for taking the time to share. Your timing was perfect and I really appreciate it! All our good wishes towards your big weight loss celebration this week!!!!! Go, go, go!!!!
Terra,
I shared this at the meeting but I wanted to let you know about it because it really is a great treat for the summer. I found this on Pioneer Woman, here is the link:http://thepioneerwoman.com/cooking/2011/07/watermelon-granita/
8 cups Watermelon
Juice from a lime
Sugar (if desired)
-Blend up in a blender
-Pour into a 9 x 13 baking dish
-Freeze and scrape every hour to two hours. (it took me a total of 6 hours to get it finished – only about 30 min of work)
I only added 2 teaspoons of sugar (and next time I won’t add any, probably). I can’t do artificial sweeteners but I think it would work well. Just wanted to share as it tastes so amazing that I don’t feel deprived at all having it as my “dessert” lately – I really was trying to save my watermelon from rotting away but found an amazing treat . I’m still eating off this recipe but I think I’m going to get 8 – 12 servings off of this. Please share on your blog if you think others may enjoy this.
Thanks
Claudia
