Combined, these two friends have lost over 70 pounds!!! Incredible, huh??? The power of the buddy system! It’s so much more fun to work toward a common goal along side others than it is alone.
Both ladies had weight losses at last week’s meeting and attributed it to meal planning ahead of time. Thanks for taking the time to share this favorite recipe with all of us.
Hint: To save time on this recipe, I would use frozen carrots and onions that are already chopped….staple foods that I keep stocked my deep freezer along with tins of other frozen veggies. They come in SO handy and really cut down on prep time in the kitchen. I would also try bagged coleslaw mix instead of chopping the cabbage myself. Just a thought!!
Beef-Cabbage Soup
1/2 lb. 93% lean beef or turkey 1 small bay leaf
1c. diced onion
1/4 t. Thyme
6 c. beef broth
1/4 t. celery seeds
1 can (16 oz.) whole or diced tomatoes + juice
1/2 C. brown rice or long grain
2 T. ketchup
4 c. chopped coarse cabbage
11/2 c, sliced carrots
1/2 t. salt
1/2 t. fresh ground pepper
1/2 t. basil
1/2 t. oregano
Medium heat brown beef-turkey & onion about 5 min.
Stir to crumble & no pink. Pour off any fat.
Add beef broth & all other ingredients except rice.
Bring to a boil.
Reduce heat & simmer for 40 Minutes.
Add the rice & simmer for another 30 minutes or until rice is tender.
Remove bay leaf & serve.
