You guys…..trust me….this is amazing soup! There are all kinds of modifications you can make to it easily too.

For example, at my house, we use frozen chicken chunks, Trader Joe’s Corn and Chile Salsa, pictured below, (instead of the Cowboy Caviar Salsa) and add some chicken broth to thin it out. I’ve never tried adding salsa and chilis, but it sounds great! Cole, my 17 year old, even asks for this soup! It’s a staple in our fall meal rotation.

It’s filling, it makes a complete meal by it’s self and it’s SO easy!

I love my crockpot!

Black Bean & Corn Soup
Makes 10 – 1 cup servings – 3pp per cup

1 Box of Trader Joe’s Latin Style Black Bean Soup
1 Jar of Trader Joe’s Cowboy Caviar Corn Salsa
1 Bag of Trader Joe’s Frozen Rice Medley
1 Tub of Trader Joe’s Fresh Packed Mild Salsa
1 Can (354g) Swanson Chicken Breast, White Premium Chunk in Water
1 Can of Diced Green Chilis

Place all ingredients in a crockpot & cook on low for 4-6 hrs.
