Trader Joe’s Eggplant Hummus
When I first got to Fresno, I had all intentions of learning to cook from scratch. I never felt like I’ve had the time or the patience in the past and now I do. Alas….I’ve learned two things from this experiment:
1.) I, in fact, do not have the patience.
2.) I don’t want to spend a lot of time doing it!
I’m a food concoctor, which is a variation of a cook, but I am not cut out for cooking most things from scratch. I love finding ways to tweak foods we enjoy while keeping them just as tasty and simple. I’m not good with portion control, so for me that means I need to make lighter choices. It works out well because I thoroughly enjoy this game!
In today’s Tasty Tuesday I’m highlighting one of my most recent and favorite go-to foods……Joseph’s Flax and Oat Bran & Whole Wheat Pita Bread and Trader Joe’s Eggplant hummus. Now that Darin and I get to eat dinner together most nights and we have no kids in the house, we like to have an appetizer/snack and occasionally a cocktail before dinner. Then we eat our meal a little later. Fun, right? I sure think so, but as you can imagine, this routine can get crazy out of hand pretty easily. And to be honest…did! Hence the strong recommitment to tweaking this to fit this stage of our lives.
Pita bread, veggies and hummus has always been one of our favorites. I know, I know, eat it with veggies instead. We do!! But let’s face it, getting to have a little bread with hummus in addition to the carrots goes a long way in the satisfaction department! So with 2 small switches, my pre dinner snack is still very substantial, not to mention tasty! It’s working well for me and I hope you like it too!!
Joseph’s Flax, Oat Bran & Whole Wheat Pitas!
I use kitchen scissors✂️(one of my most used and favorite utensils) to cut these pitas into 8 triangles to make the perfect carrier for hummus or yogurt dip. If I’m really being creative, I throw some of the triangles into my air fryer, spritz very lightly with olive oil and sprinkle with garlic salt to make pita chips. I’m sure a toaster oven would also work.
As you can see from the photo above, I’m still using Walmart’s FREE grocery pick up out here, just like I did in Illinois! Love the convenience, the prices and most of all, never having to go into Walmart! This is where I find Joseph’s pitas but I think they are everywhere.
Trader Joe’s Eggplant Hummus
This hummus is creamy and very flavorful. The eggplant flavor is very, very mild and if you didn’t know it was in there, you may not even be able to taste it. Totally worth it, in my opinion. The entire container is one cup.

So glad you’re trying it! I’ve been making a 0 Smart Points hummus too, but it’s more work than running into TJ’s! I’ll post it in coming weeks!
