Egg (Waffle) Cooking Day At Our House!

I don’t know about you, but I burnt myself out on hard boiled eggs a long time ago. I used to love them but now I’m kind of “MEH” at the thought of eating one as a snack unless it’s in a salad or on a sandwich. This became a real bummer because hard boiled eggs are such an easy, grab and go, protein filled snack. Not ready to lose a go-to food, I set out to come up with a replacement. I’m happy to report, I’ve succeeded!

Today is egg cooking day at my house. As you can see from the photo below, no one loves egg cooking day more than Oakley and Ivy!

Last fall, the WW Studio in Fresno was a test market for the Dash Mini Waffle Iron, so I bought one. They were less than $15 and my plan was to use it with the WW Blueberry Muffin and Corn Muffin mixes. If you aren’t familiar with the WW Muffin mixes, they come in a single serving cup that you add water to and microwave. They have 10 grams of protein and VERY tasty. The only issue is that I’m not a fan of eating a muffin with a fork out of a paper cup. Something about it just doesn’t appeal to me, so the mini waffle maker was the perfect solution and I’ve gotten lots of use out of it.

A friend suggested that I add an egg to the waffle mix along with the water so that it stretches out the batter.  I’ll take it!! Thank you, Stephanie!

This led me to start thinking about my egg dilemma…what if I just cracked the egg on the waffle iron? Turns out, if you spray the mini waffle maker with a little bit of cooking spray, it makes a perfect fried egg “waffle”! Yahhhhoooo…I’m excited about  eggs again! Very delicious and they keep well in the refrigerator, so I make several at a time to always have on hand. Today was egg making day for the week and I started this post immediately after I finished!

When Darin saw them, he pointed out they would fit perfectly on an English muffin for an egg sandwich, one of his favs. It works out great…I make a batch about once a week for both of us. I eat them by themselves cold or warmed up (good both ways) and he can make a quick egg sandwich before he starts work in the mornings. He never made egg sandwiches on work days in the past because it took too long to get out the pan, etc., etc. This is super simple, quick and yummy!

I’m thinking this could also work on a traditional waffle iron if that’s what you have at your house??? If you try it, let me know!

    This is genius! I don’t have a waffle maker, but I think I need to get one. I haven’t burned out on hard-boiled eggs yet, but making an egg sandwich using the waffle maker for the egg is great. I’m going to try it this weekend. Thanks, Terra! I’m still reliant on zoodles, which you introduced me to eons ago!

    I have a red mini-waffle maker. I add chopped onion (sometimes I saute it first, sometimes I don’t) and some wilted spinach chopped up. Tasty!
