This SO Easy Caprese Salad is a great way to ssssssssssstretch out a piece of string cheese into a much larger snack! Besides being simple to assemble, it actually tastes better as a day or two after making , so it’s the perfect veggie-based salad to make and have on hand throughout the week. I make it on Sundays or Mondays and store it in individual containers in my frig, so it’s easy to grab, throw in my cooler and GO. I like it as a side with my lunch (a girl can only eat so many canned green beans!) but, as with any salad, you could add a little protein and make it a meal, if you prefer. One whole grape tomato, a piece of fresh basil, a medallion of string cheese then drizzle with my new, latest obsession….Black Mission Fig Balsamic Vinegar!! Or you can serve the Black Mission Fig Balsamic in a dish and dip! Either way….YUMMY!
The SO Easy Caprese is an awesome way to make a quick dish but if you have more time, I now also really enjoy using the same ingredients and putting them on toothpicks as an appetizer or snack. I find this to be an awesome hit when I host get togethers, because who doesn’t like these simple ingredients!

So Easy Caprese with Fig Balsamic
Ingredients
- 1 container Grape Tomatoes
- 2 sticks Light String Cheese
- 2 tbsp Fig Balsamic Vinegar
- Fresh Basil
- Sea Salt & Black Pepper to taste
Instructions
- Dice string cheese into medallions. It's surprising how many pieces you can get out of two sticks of string cheese!
- Half your tomatoes, and add with balsamic and toss.
- Sprinkle with basil, sea salt and black pepper to taste.
- Enjoy!

this looks soooo yummy. Have you discovered Balsamic Glaze? I haven’t checked the points, but it adds a really nice little something on grilled chicken, vegies, etc.
I’ve made my own, believe it or not!! Took a long time on the stove…would be easier to buy it! What brand do you get??
