Ok Folks….
If you know me at all, you know that I consider myself a “volume eater”. I’ve always eaten fairly healthy, but my challenge has always been eating too much. In my next life, I’d like to come back as a high school boy……they seem to be able to eat like horses, yet only grow taller and stronger!!! Where do you sign up to get one of those bodies????
Today’s Tasty Tuesday caters to all of us volume eaters for sure! Like most of the TT’s (Tasty Tuesday’s), it’s especially easy and quite healthy.
You do have to get out a skillet or wok, but I promise you it’s worth the effort!!
QUICK CABBAGE STIR FRY
1 package of shredded Cole slaw OR broccoli slaw
4 oz of any cooked protein you like…lean ground beef or turkey, chicken or shrimp*
4 Tablespoons of Sweet Chili Sauce (Trader Joe’s is my fav, but any sauce you like will work just fine)
*Trader Joe’s sells frozen, precooked shrimp with the tails already removed. This makes this recipe even easier. They are great to keep on hand, in your freezer for wall kinds of quick easy meals!!!
Generously spray your large skillet with nonfat cooking spray and heat until very hot. Cut open bag of slaw and stir fry until soft.
Add your pre cooked protein and continue tossing.
Add chili sauce and a dash of soy sauce, if you like.
And that’s it! It tastes like an egg roll, minus the fried “roll”!!
I got back from Scottsdale last night and wow, what a trip!! It was in the high 80s all weekend! We hiked Camel Back Mountain and enjoyed being outside as much as possible.
It’s been a rude awakening this morning…wind howling and 12* outside! Boohoo! But SPRING is just around the corner, so let’s all hang in there!
