It’s Tuesday again and as usual, it’s going to be a tasty one!!! This week I have a fabulously fresh and light summer salad for you to try, straight from my friend Kellee’s kitchen.
A self proclaimed “Foodie” and amazing cook, Kellee has managed to maintain her passion for food and cooking WHILE losing 60+ pounds!!! It can be done and Kellee is inspiring proof!!
There are many terrific olive oil stores out there, but here in the Geneva area, we LOVE the Olive Mill! It’s located right off Geneva’s historic Third Street at 315 James Street, across the street from the court house on the north side.
They carry a huge assortment of flavored olive oils and delicious flavored balsamic vinegars. If your in the area, I would highly recommend stopping in and sampling some of their unique selections!!!

This is the salad recipe I was talking about today. I am in love with the oils & vinegar from the Olive Mill. (I may have to get a job to support my habit)
I am tired of trying the endless varieties of bland salad dressings that are not satisfying.
I know this looks like a lot of work but it really only takes about 15-20 min to make. I usually buy everything pre-washed & ready to go. We grill extra on the weekends to use during the week so all I have to do is chop.

Confetti Salad with Lemon Vinaigrette
Vinegar & Oils from The Olive Mill in Geneva
Salad:
1 cup finely chopped or shredded kale
1 cup finely chopped or shredded arugula
1 cup finely chopped or shredded lettuce of choice
1 cup finely diced English cucumber
1 cup finely diced cherry tomatoes
1 cup finely diced yellow pepper
1 cup finely diced or shredded carrots (I use the Trader Joe’s shredded carrots in a bag & chop them smaller)
3 ounces Lean protein (grilled chicken, shrimp, salmon, pork or steak would work)
Vinaigrette:
1 tablespoon Meyer Lemon Olive Oil
2 tablespoons Tuscany Balsamic Vinegar
1 tablespoon White Lemon Balsamic Vinegar
Salt & Pepper to taste
Feel free to improvise & add fresh herbs, shallots, lemon zest & other vegetables. Use what you like omit what you don’t.
Mix all salad ingredients together. Wisk vinaigrette ingredients in a small bowl. Pour vinaigrette over salad. Enjoy!!
