Happy Tuesday, Everyone!!!
The below recipe was shared by Linda in my meeting last week. It is not only simple and meatless, it is also complete protein, so it’s going to fill you up.
I’m going to use the lentils from Trader Joe’s that are already steamed (pictured below) to cut down in cooking time. Also, feel free to substitute whatever type of rice you prefer. I’m going to use the brown rice medley from TJ’s because it’s my favorite!!

Here’s the recipe you wanted me to send that we talked about last week.
2 Cups Jasmine Brown Rice
2 Cups Lentils
1/4 Cup Raisins
Serves 4
Serving Size 1 Cup
Cook white or brown rice, alone, according to package directions.
At the same time, boil lentils till soft.
Drain lentils, and add to rice when it is almost done.
Add raisins after the lentils and stir in so they get hydrated.
This combo stays fresh in the fridge for a week. In Persian dishes it’s normally paired with lamb, but can easily be eaten as a full meal by it’s self.
