I’ve missed you guys!! Darin and I took the boys to Puerto Rico for spring break to celebrate Cole’s 18th birthday. Wow, what a trip! I had forgotten what 80 degree, sunny weather felt like after our LONG winter!!! I loved every minute of the sun, the water and being alone with my family. The photo below was the view from our balcony. It was gorgeous. To quote an over used commercial, the whole trip was….”PRICELESS”. Haha:-)
Here is a fabulous recipe for Spicy Chicken & Mushrooms from a good friend and successful Weight Watchers member who’s lost more than 40 pounds!!! Woooohoooo!!! Thanks for sharing Ellen!

Here is a good chicken recipe to share that we really like
Spicy Chicken & Mushrooms
1 T olive oil
2 cloves garlic, minced
1 T minced ginger
2 c sliced mushrooms
4 scallions, sliced
1/2 t red pepper flakes
1/2 t ea salt and pepper
1 lb boneless skinless chicken breasts, cut into 1/2 inch pieces
1 1/2 T low-sodium soy sauce
1 T rice vinegar
1/2 c chopped cilantro
Heat oil in medium size skillet over medium heat. Add garlic and ginger; cook 1 minutes. Stir in mushrooms, scallions, red pepper flakes and 1/4 t ea of salt and pepper; cook 3 minutes, stirring often.
Add chicken and sprinkle with remaining 1/4 t ea salt and pepper. Cook, stirring for 4 minutes or until cooked through.
Stir in soy sauce, vinegar and cilantro; cook 2 minutes. Serve with rice if desired.
Enjoy! If you don’t like spicy, cut back on that red pepper flakes!
Serve with some steamed veggies and it’s a nice low point meal.
