My Weather Channel app says there is a good chance of snow today, so I’m sharing a comfort food recipe guaranteed to fill you up with warm goodness and keep you satisfied!! It was shared at one of my Weight Watchers meetings last week and it spread like wild fire!! Thanks for cutting it out of the paper and bringing it in, Julie L. !!!! Also a BIG thank you to Joanne Z. for taking the time to type it up and email it to me so that all I had to do was cut and paste and voila…..all 850+ of us have instant access to this yummy, hearty lentil soup!

This soup is so delicious!! I made it for dinner Friday night. My husband also loved it.
I had Trader Joe’s Chicken Sausage in my fridge so I used 3 of the links which would be less than 7 ounces for the whole recipe and it seemed like plenty. And I used all low sodium chicken stock instead of water. Other than that, I followed the recipe. It’s even better the next day.

Serving Size: 1 cup
Prep time: 20 minutes
175 Calories Per Cup
Ingredients:
14 oz. lean smoked turkey sausage, sliced
1 cup celery, medium dice
1 medium onion, medium dice
1 carrot, medium dice
3 cups water
1 (14.5 ounce) can reduced sodium fat free chicken broth
2 (14.5 ounce) cans no-salt added diced tomato
1 cup dried lentils
½ teaspoon salt
1 teaspoon ground black pepper
1 bay leaf
Directions:
Coat a large soup pot with cooking spray. Over medium-high sauté sausage until lightly brown. Remove from pan.
Add celery, onions and carrots to pot and sauté over medium-high heat for approximately 4 minutes.
Add the sausage and all remaining ingredients. Bring to a boil; reduce heat and simmer for 1 hour.
Remove bay leaf and serve.
