Garlic Mashed Cauliflower
Equipment
- immersion blender or food processor
Ingredients
- 1 cauliflower medium head
- 1 tbsp cream cheese softened
- 0.25 cup grated parmesan
- 0.5 tsp minced garlic
- 0.125 tsp straight chicken base or bullion
- 0.125 tsp black pepper freshly ground
- 0.5 tsp chives chopped
- 3 tbsp unsalted butter optional
Instructions
- Bring pot of water to boil
- Cut cauliflower into small pieces, and cook in boiling water for about 6 minutes, or till well done
- Drain well; do not cool but immediately pat very dry between several layers of paper towels
- Using immersion blender or food processor, puree hot cauliflower with cream cheese, parmesan, garlic, chicken base and pepper until almost smooth
- Garnish with chives and serve hot with pats of butter
