Garlic Mashed Cauliflower

Equipment

  • immersion blender or food processor

Ingredients
  

  • 1 cauliflower medium head
  • 1 tbsp cream cheese softened
  • 0.25 cup grated parmesan
  • 0.5 tsp minced garlic
  • 0.125 tsp straight chicken base or bullion
  • 0.125 tsp black pepper freshly ground
  • 0.5 tsp chives chopped
  • 3 tbsp unsalted butter optional

Instructions
 

  • Bring pot of water to boil
  • Cut cauliflower into small pieces, and cook in boiling water for about 6 minutes, or till well done
  • Drain well; do not cool but immediately pat very dry between several layers of paper towels
  • Using immersion blender or food processor, puree hot cauliflower with cream cheese, parmesan, garlic, chicken base and pepper until almost smooth
  • Garnish with chives and serve hot with pats of butter
