This recipe is an oldie but a goodie and just in time for Halloween!!
You can whip up a batch of this chili in the morning, leave it in the crock pot or instant pot and then spend your evening handing out candy to trick or treaters on Halloween with no worry about “what’s for dinner”! The combo of fiber and protein is super filling and is just the added boost needed to keep from eating too much Halloween candy! You CAN definitely stay in control this year!!! Make it easy by setting yourself up to succeed!!

Terra's Famous 1 Point Chili
Who doesn't love a steaming cup of delicious warm chili on a cold evening?? Now add in the fact this chili is LOADED with protein and fiber to fill you up and keep you satisfied, is SUPER healthy and only 1 Point/45 calories a cup! This one is a keeper!
Ingredients
- 20 ounces 95% Lean Ground Beef
- 1 Large Sweet Onion Diced
- 2 28 ounce cans Cans of Fire Roasted Tomatoes Plain tomatoes work find too. Or go Rotel for some added spice!
- 2 medium Zucchini Diced
- 2 medium Yellow Squash Diced
- 4 stalks Celery Diced
- 2 medium Green Peppers Diced
- 1 15 ounce can Black Beans Drained and Rinsed
- 1 15 ounce can Kidney Beans Drained and Rinsed
- 2 15 ounce cans 100% Pure Pumpkin
- 2 Packets Chili Seasoning Modify based on personal taste
- 2 32 ounces Beef Broth
Instructions
Brown the ground beef. Drain and set aside.
Sauté the fresh veggies in soup pot using non fat cooking spray OR instant pot.
Add broth, tomatoes, browned ground beef, pumpkin, beans and spices.
Simmer for 20-30 minutes or as long as desired.

Terra, I love this recipe! I remember you shared this with your WW group and it introduced me to the concept of using pumpkin as a filler in recipes. It was absolutely genius!! 🙂 I have been struggling with my meal prep time here lately, but this recipe is one that I am making time to prepare and will live in my rotation for the duration of fall and winter! Looks great, and I’m focusing on eating more and different veggies. I’m burnt out on grilled asparagus/mushrooms! Due to weather conditions, I am breaking out the wok, and this will give me another option.
