Terra’s Roasted Potatoes, Peppers & Sausage

I tried so many recipes throughout our shelter in place! Some have “stuck” in our weekly rotation and others not so much! But how do you know if you don’t try???

This one I made up myself and we have yet to tire of it, so thought I’d share it with you. Anyway, it’s easy, very filling and very nutritious. Definitely checks all of our boxes for an awesome dinner!

I’m not a meat eater but Darin is, so I’m always on the lookout for easy ways to accommodate both of us without making 2 separate entrees. This one is perfect for us! I use Trader Joe’s Italian Sausage-less Sausage on half of it and Trader Joe’s Italian Chicken Sausage on the other half. The sausage-less one is VERY good and Darin agrees with me, so depending on what I have in the house, sometimes I will use it for the whole recipe. Of course, you could use all chicken sausage too, it that’s preferable to you!

Ingredients
  

  • 1 Yellow pepper
  • 1 Green pepper
  • 1 Red pepper
  • 1 Small sweet onion
  • 2 Jalapeño peppers (optional)
  • 12 Mini red or gold potatoes I highly recommend The Little Potato Company fresh creamer potatoes. They are delicious and portion controlled!
  • 4 Trader Joe's Italian Sausage links Your choice of meatless, chicken or combo of both
  • 2 tsp Olive oil
  • Thyme, salt & pepper to taste

Instructions
 

  • Preheat oven to 375*. Remove seeds from all peppers...especially the jalapeño peppers unless you want it very hot!
  • Cut peppers, onions and sausage into bite sized pieces and put in a gallon sized ziplock bag or large mixing bowl.
  • Add potatoes. We like them whole but you could halve them.
  • Add olive oil & spices to taste. I prefer to use my olive oil in a spritzer bottle to help with portion control.
  • Ziplock the bag and shake or coat evenly by stirring in a mixing bowl.
  • Empty onto a large baking sheet lined with foil, sprayed with non stick cooking spray and for easy clean up.
  • Bake at 375* for approximately 30 minutes or until potatoes are soft. The Little Potatoes cook quickly, so keep an eye on them.

    This is a great recipe for grilling on the BBQ as well! Perfect for our 106°F day. I’m out of sausage, but I bet it’d delish with prawns.

      Yes, definitely BBQ vs oven when it’s 106*!! Lol! I ❤️ the CA weather though, so I’m not complaining!!! Prawns would take the Smart Points way down since they’re zero!!! Let me know if you try it See you in a workshop soon!!
